If you are looking for that special breakfast recipe dish that will impress your guests but is easy to prepare, this elegant egg dish is for you! Our version of an old classic. At the Flery Manor, we serve our dish with fresh poached salmon from our local Rogue River; our guests may have caught it themselves.

Ingredients
6 eggs, carefully separated
6 toasted rounds, cut from your favorite bread
Your favorite Hollandaise sauce recipe

Preheat oven to 350 degrees. Toast bread rounds and place on baking sheet. Whip eggs whites until stiff peaks form. Divide egg whites over rounds, and, with the back of a spoon, form a hollow in the center of each. Place yolk (the yellow part) in the hollow. Bake in oven, being careful not to over cook. Cook until yolk is set and white is lightly browned (about 15 minutes). Serve topped with Hollandaise sauce and a dash of paprika.

Serves: 6.
