Irish Soda Bread
from "Grampa Red Louth"

Ingredients

2 cups all-purpose flour

1-1/2 teaspoons baking powder

3/4 teaspoon baking soda

1 teaspoon salt

4 Tablespoons sugar

3 Tablespoons butter

1 cup buttermilk

2/3 cup raisins

1 Tablespoon melted butter

1/4 teaspoon cinnamon

Combine powder, baking soda, salt, and sugar. Cut 3 Tablespoons butter into flour mixture until coarse, make a well in center, and pour in buttermilk. Add raisins. Mix lightly. Turn onto lightly floured board and knead 8 times. Shape into round loaf and place in an 8- or 9-inch cake pan. Use scissors to make a cross on top of bread 1/3 the way into dough. Brush top with 1 Tablespoon melted butter and cinnamon. Bake 25 minutes in a 350-degree oven. Serve warm with butter. A delight in any season.
