Soda Bread

Ingredients

7 cups flour white, whole wheat, or 1/2 of each

1 teaspoon salt

1 teaspoon sugar

1 teaspoon baking soda

1/2-liter carton of buttermilk

Mix the dry ingredients together several times. Make a well in the center and pour in the buttermilk gradually, mixing in the flour from the sides. Turn on to a floured board and knead lightly for a few minutes. Form into a round cake. Cross the top, brush with milk and put into a hot oven on a baking tin for about 40 minutes at 400 degrees. Handle the mix very lightly when mixing.

We cross the top of the soda bread to stop it from cracking during baking. Cut over the sides to be sure of this. To test to see if bread is cooked, tap the bottom of the bread and if it sounds hollow, it's done.
