Curried Almonds

We serve these with sherry or cocktails or just for a fast nibble. They can be made well in advance and kept fresh in a sealed bottle. If you prefer a spicier version, increase the amount of curry. What a great hostess gift when prettily wrapped.

Ingredients:

1 pound raw, unblanched almonds

1 egg white

2 Tablespoons curry powder

2 Tablespoons sugar

1 teaspoon salt

1 Tablespoon butter

Whisk egg white with spices and sugar. Add almonds and stir to coat. Put butter on a large cookie sheet and melt in 375-degree oven. Spread coated almonds on a cookie sheet and return to oven for 20 minutes or until lightly toasted, turning almonds now and then to prevent sticking and to even out toasting. Allow to cool thoroughly before storing.
