Christmas dinner in a Mennonite family nearly always includes date pudding. There are several variations of this dessert, but this recipe is my favorite.

Ingredients

1 cup boiling water

1 cup chopped dates

1/2 cup sugar

1/2 cup brown sugar

2 Tablespoons butter

1/2 teaspoon baking powder

1/2 teaspoon salt

1-1/2 cup flour

1/2 cup chopped nuts

1-1/2 cup boiling water

1-1/2 cup brown sugar

1 Tablespoon butter

1 teaspoon vanilla

Combine and cool 1 cup boiling water and chopped dates. Cream sugar, 1/2 cup brown sugar, and 2 Tablespoons butter together. Blend in baking powder, salt, and flour. Add chopped nuts and mix all together. Spread batter into an ungreased 9 x 13-inch baking pan.

Stir together 1-1/2 cups boiling water, 1-1/2 cups brown sugar, 1 Tablespoon butter, and vanilla. Pour over batter and bake at 350 degrees for 25 to 30 minutes. Just before serving, cut cakes into small cubes and layer in serving bowl with Cool Whip dessert topping, instant vanilla pudding (mixed according to package directions), and banana slices.
