Palachinke (Filled Pancakes)

This is another of my wife Janet's recipes that I have enjoyed...a Palachinke is a filled pancake.

Ingredients - Cakes:

1-1/4 cup of cake flour

1-1/4 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon sugar

1 cup milk

2 egg yolks, beaten

2 Tablespoons melted butter

2 egg whites, stiffly beaten

Ingredients - Filling:

1 pound creamed cottage cheese

2 eggs

1/4 cup sugar (can be less)

Cake: Sift flour, measure, add baking powder, salt and sugar; sift once more. Add milk to egg yolks. Add flour mixture gradually; mix to smooth batter. Add butter. Fold in egg whites. Bake on hot greased griddle.

Filling: Mix well. Spread on each pancake, roll up and place side by side in greased cake pan.

Bake 30 minutes at 350 degrees.
