Crustless Vegetable Quiche

This recipe is especially good when you have a crowd to serve who may not all be eating at the same time. It can be kept warm on a warming tray for 3 hours with no loss of flavor or texture.

Ingredients:

1 dozen eggs

1/2 cup milk

1 Tablespoon butter

8 ounces sour cream or yogurt

1 cup sliced mushrooms

1 teaspoon fresh herbs (basil, thyme, parsley, or your favorite)

1 cup shredded cheese

Melt butter in pan. Mix together eggs and milk and scramble until soft. Cool and stir in sour cream or yogurt, mushrooms, herbs, and shredded cheese. Spread into 9-inch pie plate. Cover with foil, refrigerate overnight. Bake in oven at 325 degrees for 30 to 40 minutes until hot and cheese is melted. Let stand 10 minutes before slicing.

Serves: 8
