Southwest Strata

Ingredients:

3 large 10-inch whole wheat tortillas (or regular flour tortillas)

3 cups grated Monterey jack cheese

1 cup grated mild cheddar cheese

One 13-ounce frozen container of mild chopped green chile or an equivalent amount of canned green chile, drained to remove excess water

6 eggs

2-1/2 cups milk

1 teaspoon salt

1/2 teaspoon pepper

Sour cream, black olives, tomato, and parsley for garnish

Butter a 10 x 13-inch casserole pan. Cover the bottom with a single layer of tortillas (cut to fit). Mix the cheeses together and put half the cheese on tortilla layer, followed by half the chopped green chile. Repeat with another layer of tortilla, cheese and chile. Beat eggs, milk, salt and pepper together and pour over. Let set in the refrigerator at least 3 hours, preferably overnight. Bake at 350 degrees for 45 minutes. Turn down oven to 250 degrees and bake another 15 minutes. The strata is done when firm to the touch and the egg mixture is set. Let the casserole rest for 5 minutes before serving. Garnish with a dollop of sour cream and an olive, sliced tomato, and parsley on the side.
