Omelettes with Sherry Sauce

Ingredients:

1 cup mushrooms (sliced and sauteed)

Sauce:

3 Tablespoons butter

3 Tablespoons flour

1-1/2 cups milk

1 cup very sharp cheddar cheese, shredded

3 Tablespoons sherry

In a saucepan melt butter and stir in flour to make a roux. Blend in small amount of milk; gradually stir in rest of milk; when mixture begins to thicken add cheese, sherry, and mushrooms. Make omelette; spoon in mixture. Top with garnish of choice.

Serves: 6
