Ingredients

1/2 cup vegetable oil

2 eggs

1 cup canned pumpkin

1-2/3 cups sifted flour

1-1/4 cups sugar

1 teaspoon baking soda

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/6 cup water

Combine oil, eggs, water, and pumpkin. Sift dry ingredients together and gradually beat into pumpkin mixture. Pour batter into muffins tins which have been sprayed with non-stick cooking spray. Bake at 350 degrees for 15 to 20 minutes for muffins, 1 hour for bread.

Makes: about 12 muffins or 1 loaf bread.
