Ingredients

One 4-ounce can diced mild green chiles

One 8-ounce carton cottage cheese, small curd

2 cups Monterey Jack cheese, grated

5 to 6 eggs, beaten

2 Tablespoons flour

1/2 teaspoon baking powder

2 Tablespoons margarine, melted

Mix eggs, chiles, cottage cheese, and jack cheese. Add flour and baking powder and mix well. Add melted butter and mix. Pour into a 10-inch pie pan sprayed with non-stick cooking spray. Pottery or glass pans work best.

Bake at 400 degrees for 10 minutes, then reduce temperature to 350 degrees and bake for another 20 minutes or until set.
