Chorizo Roll

Ingredients:

12 eggs

1-1/2 cups milk

2 cups Cheddar cheese

salt and pepper to taste

4 links of Mexican chorizo

2 cups cubed French bread

8 ounces cream cheese

1 Tablespoon diced green chile

Fry chorizo and drain. Beat eggs and add all ingredients except cream cheese and chile. Mix softened cream cheese with green chile and put aside. Spray a jelly roll pan with non-stick cooking spray. Line jelly pan with foil, including sides. Spray generously again with cooking spray. Spread mixture in pan.

Cook for 45 minutes to one hour until egg is firm. Wait until it cools. Turn egg out onto waxed paper and spread cream cheese with green chile on entire surface. Carefully peel off foil, using wax paper as helper. Roll egg mixture into a tight cylinder. Garnish with salsa and avocado.

Serves: 6
