Apple Muffins

Ingredients:

3-1/2 cups flour

3 cups finely chopped apples

2 cups sugar (half brown and half white)

1 teaspoon salt

2 teaspoons baking soda

1 Tablespoon cinnamon

1 cup vegetable oil

3 eggs

2 cups chopped nuts

2 teaspoons vanilla

Preheat oven to 350 degrees. Grease muffin tins. Thoroughly combine apples and sugar, then add the rest of the dry ingredients. Mix well. Add oil, eggs, nuts, and vanilla, then mix in dry ingredients. The batter will be very thick and gooey. Fill muffin tins 2/3 full. Bake about 30 minutes. Can be frozen.
