Cowboy Coffee Cake
This is an "old favorite." Our mother started
making this in the 1940's.
- Ingredients
- 2-1/2 cups flour
- 2 cups brown sugar
- 1/2 teaspoon salt
- 2/3 cup shortening
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup sour milk
- 2 well-beaten eggs

Combine flour, brown sugar, salt, and shortening; mix until
crumbly. Reserve 1/2 cup of crumbly mixture to sprinkle over top
of cake. To remaining crumbs, add baking powder, baking soda, and
spices; mix well. Add milk and eggs and stir until smooth.
Place in 2 greased pie pans or 8-inch layer cake pans and
sprinkle with reserved crumbs. An additional 1/2 teaspoon cinnamon
and 1/2 cup chopped nuts may be sprinkled over the crumbs. Bake at
375 degrees for 25 to 30 minutes.
