Grandma Tina's Belina
(German Raised Pancakes)

Ingredients

1 package of yeast

3-1/4 cups warm water

3-1/2 cups flour

2 eggs, beaten

1/3 cup sugar

1 teaspoon salt

1 teaspoon baking powder

Dissolve yeast in 1/4 cup warm water. Alternate flour and the rest of the warm water. Let this sponge stand overnight, or about 4 hours.

Add the remaining ingredients. If mixture is too thick, use warm milk to thin. It should be fairly thin so it will pour easily. Heat and lightly grease a flat skillet. Pour in enough batter to cover the entire bottom of skillet (1/2 dipper of batter). Cook over medium heat until bubbles form and Belina is brown on bottom side. Turn and cook until brown on other side. Spread 2 Belinas with butter and syrup, then, using the times of the fork, roll the Belina and enjoy.

Serves: 6
