Ingredients:

2-1/2 cups all-purpose flour

3/4 cup sugar

1 Tablespoon double-acting baking powder

1/2 teaspoon salt

6 Tablespoons butter or margarine

3 ripe medium bananas, cut up

2 eggs

1/3 cup milk

1 teaspoon vanilla extract

Preheat oven to 400 degrees. Grease muffin cups. In a large bowl, mix flour, sugar, baking powder, and salt with fork. With pastry blender or 2 knives, cut in butter or margarine until mixture resembles coarse crumbs. Set aside. In covered blender, blend bananas, eggs, milk, and vanilla only for a few seconds until bananas are chopped. Stir banana mixture into flour until moistened. Spoon butter into cups. Bake for 20 to 25 minutes.
