Apple Bread Pudding
This dish can be prepared the night before, if desired, then
baked before serving time.
- Ingredients
- One 1-pound loaf firm raisin bread, sliced
- 1/4 cup butter (1/8 pound)
- 3 cups peeled and sliced tart apples (3 medium)
- 2 Tablespoons all-purpose flour
- 1/2 cup sugar
- 1 teaspoon ground cinnamon
- 4 eggs, lightly beaten
- 2-1/2 cups milk
- 1/2 teaspoon salt
- Maple syrup
If you plan to bake this dish immediately, preheat the oven to 350
degrees. Grease a 13 x 9 x 2-inch baking dish. Remove the crust from
the bread and cut the slices into 3/4-inch cubes. In a medium frying
pan, melt the butter. Add the apple and cook, stirring occasionally
for 5 minutes or until tender.
Combine the flour, 2 Tablespoons of the sugar, and the cinnamon and
stir into the apple. Cook, stirring gently for 1 minute or until
thickened. Spoon into the prepared baking dish. Layer the bread cubes
over the apple mixture.
In a medium bowl, mix the egg, milk, salt, and remaining sugar. Pour
over the bread cubes. Using a spoon, press down on the bread so it
absorbs the egg mixture. Cover and refrigerate for at least 8 hours or
overnight, or bake immediately.
Bake for 50 to 70 minutes or until golden and a knife inserted in
the center comes out clean. Cut into squares and serve warm, with
maple syrup.
Serves: 8
