Ingredients

1/4 cup corn meal

1/4 cup unbleached flour

1/2 cup whole wheat flour

1/2 cup rolled oats

1 Tablespoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1-1/2 cups buttermilk

1 egg

1/3 cup canola oil

In a large bowl, combine dry ingredients well with a wire whisk. In a separate bowl, mix buttermilk, eggs, and canola oil with a wire whisk. Add the liquid mixture to the flour mixture, stirring just enough to blend. Let batter sit for 10 minutes.

Cook batter (approximately 1/4 cup per pancake) on a hot griddle. Enjoy!
