Chocolate Chip Orange Muffins

Ingredients

2 cups flour

1/2 cup sugar

1 Tablespoon baking powder

1/2 teaspoon salt

Chopped zest of 1 orange or 2 teaspoons of dried orange peel

1 cup mini chocolate chips

2 eggs

1/4 cup vegetable oil

2 Tablespoons orange extract

1 cup milk

Prepare muffin tins with foil liners. Mix flour, sugar, baking powder, salt, orange, zest, and chips in large bowl. Whisk eggs, oil, orange extract, and milk in smaller bowl. Pour liquid mixture over dry ingredients and fold in with rubber spatula just until combined. Remember not to over-mix.

Pour batter three quarters of the way into muffin liner. Bake at 300 degrees for 15 to 20 minutes. Sprinkle with confectionery sugar.

Makes: 12 to 14 muffins
