Spicy Pumpkin Bread

Ingredients

4 eggs

2 cups sugar

1-1/4 cups cooking oil

One 16-ounce can solid pack pumpkin

3 cups all-purpose flour

2 teaspoons baking powder

2 teaspoons baking soda

1 teaspoon salt

1 teaspoon cinnamon

1 teaspoon nutmeg

1 teaspoon ground cloves

1 cup seedless raisins (optional)

1/2 cup nuts (optional)

In large mixing bowl, beat eggs until light and fluffy. Add sugar, cooking oil and pumpkin; mix well.

Sift together flour, baking powder, baking soda, salt, cinnamon, nutmeg and cloves; add to pumpkin mixture, a little at a time, and stir until thoroughly blended. Fold in raisins and nuts. Pour batter into 2 greased and floured 9 x 5 x 3-inch loaf pans, dividing batter evenly between the two.

Bake in a 350 degree oven for 1 hour and 5 minutes or until tester comes our free of batter. Cool in pans for 5 minutes. Turn out onto racks to cool. Wrap and store.
