Chocolate Bonbons

Ingredients for filling:

2 cups powdered sugar

2 cups flaked coconut

3 Tablespoons evaporated milk

2 Tablespoons melted unsalted butter

1 teaspoon vanilla

Ingredients for Coating:

1 cup (8 ounces) semisweet chocolate chips

2 Tablespoons butter

1/4 cup heavy cream

Filling: Line baking pan with waxed paper, set aside. In small bowl combine sugar, coconut, evaporated milk, melted butter and vanilla. To make bonbons shape 1/2 teaspoons of filling mixture in balls. Place on lined baking sheet and place in refrigerator until firm.

Coating: Melt butter in saucepan. Add heavy cream. Add chocolate chips and stir continuously with rubber spatula over low heat until smooth.

Dip bonbon filling in chocolate mixture and place back on lined baking sheet. Refrigerator until firm. Store in refrigerator.
