Blueberry Muffins

Ingredients

1 cup flour

1/2 teaspoon salt

1 teaspoon baking powder

1/2 teaspoon baking soda

1 cup firmly packed brown sugar

1 cup oats

1 cup sour cream

5 Tablespoons softened butter

2 eggs

1 Tablespoon flour

1 cup blueberries

Preheat oven to 375 degrees. Spray medium-size muffin tin with non-stick cooking spray. Mix 1 cup flour, salt, baking powder, baking soda, brown sugar, and oats together. In a separate bowl, mix sour cream, butter, and eggs together. Add wet ingredients to dry. Toss blueberries with 1 tablespoon flour and mix into batter. Scoop batter into muffin tin.

Bake for 20 minutes until toothpick comes out clean. Spin pan around halfway through cooking time. Let muffins cool in pan 10 minutes after baking, then remove from pan.

Yield: 12 medium muffins
