Auntie May's Oatmeal Spice Cookies with Chocolate Chips

There's nothing like returning from a day of hiking to the aroma of Auntie May's Oatmeal Spice Cookies fresh out of the oven!

Ingredients:

1 stick (1/2 cup) margarine

1/2 cup applesauce

1 cup firmly packed brown sugar

1/2 cup sugar

2 eggs (egg substitute works well)

1 teaspoon vanilla

1-1/2 cups flour

1 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon allspice

3 cups oatmeal (I use Quaker)

1 cup chocolate chips (I use Ghirardelli's)

Heat oven to 350 degrees. Beat together margarine, applesauce, and sugars until creamy. Add eggs or egg substitute and vanilla; beat well. Combine flour, baking soda, cinnamon, and allspice. Add combined flour mixture to margarine mixture; mix well. Stir in oats and chocolate chips (at least 1 cup).

Drop by rounded tablespoonfuls onto greased cookie sheet. Bake 10 to 12 minutes until light golden brown (edges should be golden brown). Cool 1 minute, then move to wire cooling rack. Get out the milk (low fat, of course)!
