Coffee Cake and Streusel Topping

Ingredients

1/4 pound butter

1 cup sugar

2 eggs

2 cups flour

1 teaspoon baking powder

1 teaspoon baking soda

1/2 pint sour cream (add a little extra)

1 teaspoon vanilla

1 apple, thinly sliced

Streusel Topping

2 Tablespoons melted butter

2 Tablespoons flour

Cinnamon, sugar, and chopped walnuts

Cream butter and add sugar. Add eggs and vanilla. Add dry ingredients, alternating with sour cream. Add cinnamon to mixture for a little extra flavor. Sprinkle the apple slices with cinnamon and sugar. In a separate bowl, mix streusel topping ingredients to make a paste.

Pour a small amount of cake batter into greased tub pan (or divide into 2 loaf pans -- 8 x 3-3/4 x 2-1/2 inches). Lay apple slices on the batter, then add remaining batter over the apple slices. Sprinkle top of cakes with streusel topping, or mix topping throughout the coffee cake. Bake for 55 minutes at 350 degrees.
