Pumpkin Pancakes

Ingredients:

1-3/4 cups unbleached all-purpose flour

2 Tablespoons double acting baking powder

2 Tablespoons firmly packed light brown sugar

1 teaspoon salt

2 teaspoons cinnamon

1 teaspoon ground allspice

1 cup solid pack canned pumpkin

1-1/2 cups canned evaporated milk (not condensed)

2 large eggs, beaten slightly

1-1/2 teaspoons vanilla

1/4 cup bacon drippings

In a large bowl sift together the flour, baking powder, brown sugar, salt, cinnamon, and all spice, stir in the milk, pumpkin, eggs, vanilla and the bacon drippings, and stir the batter until it is combined well. Heat a greased griddle over moderate heat until it is hot enough to make drops of water scatter over the surface. Pour the batter onto the griddle by 1/3 cup measures. Cook pancakes for 2 minutes on each side, or until they are golden and cooked through. Serve the pancakes with maple syrup, honey or fruit.

Makes: 16 pancakes
