So says Chef Jim: "I must say the yellow split peas and smoked ham hocks do all the work in this recipe, but being a simple peasant-style soup (as history can vouch for), this is as it should be." Simply follow the directions on the split pea package, changing the water quantity to 8 quarts and adding all of the other ingredients above. Bring the mixture to a boil, and then turn it down to simmer for 2-1/2 hours. Continue cooking if necessary to bring it to your personal preference for thickness. Having reached that point, take out the ham hocks and let them cool until you can handle them. Render the meat and dice it, and then add it back to the soup. Personally, I feel this soup is better tasting when prepared a day ahead. Water or stock may be needed to thin it some after refrigeration." Serves: 8 to 12.
