Buttermilk Scones
These scones are always a hit at our bed and breakfast. The
basic recipe comes from Marion Cunningham.
- Ingredients:
- 3 cups flour
- 1/3 cup sugar
- 2-1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 1-1/2 sticks unsalted margarine
- 1 cup buttermilk
- 1 Tablespoon grated orange or lemon zest
- dried fruit, if desired
Preheat oven to 425 degrees. In medium bowl, stir in flour, sugar,
baking powder, baking soda, and salt. Cut margarine or butter into
small pieces and add; cutting in with pastry blender. Mix in about 4
to 6 Tablespoonfuls of raisins, dried cranberries, dried apricots, or
cherries (cinnamon or lemon chips are also good). Pour in buttermilk
and mix with a fork just until dry ingredients are moistened. Add a
little extra buttermilk if it appears to be dry. Knead a few times on
a lightly floured board and cut in half. Pat one half into a 6- to
7-inch circle and cut into 8 sections. Separate and place on ungreased
cookie sheet about 2 inches apart. Do the same with the second half.
Bake for 10 to 12 minutes at 425 degrees until golden.
If you're not using dried fruit, the tops can be dusted with a
little sugar. Also, just in case fresh buttermilk is not available, I
keep dried buttermilk on hand. It is in the baking section of the
grocery. All you need to do is mix 4 Tablespoons of the dry buttermilk
with the rest of the dry ingredients and then 1 cup of water in place
of the fresh buttermilk. It works just fine.
These can be frozen. When needed, just thaw and heat on a cookie
sheet in a 350-degree oven for 5 minutes. These are delicious with jam
or fresh lemon curd!
