Ingredients:
1/2 cup salsa
2 cups shredded cheese
6 eggs
1/2 cup sour cream
1/2 cup cottage cheese

Spray 9-inch glass pie plate completely with cooking spray. Layer the salsa, then the cheese. In a medium bowl, whisk the eggs, sour cream, and cottage cheese together. Pour over cheese. Bake in a preheated 350-degree oven for 45 minutes; let set, then quarter and serve warm. Garnish with green peppers.
