Specialty Recipe

Sixth District Apple Pie

Ingredients for Crust:

2 cups sifted flour

1/2 teaspoon sugar

1/4 teaspoon salt

3/4 cup butter or shortening

5 Tablespoons water

1 egg, beaten

Ingredients for Filling:

1-1/2 pounds peeled and diced cooking apples (4 to 5 cups)

6 ounces light brown sugar

1/2 cup raisins

1 teaspoon cinnamon

1/2 teaspoon nutmeg

5 Tablespoons flour

Grated rind of 1/2 lemon

1/2 teaspoon lemon juice

1/4 teaspoon vanilla

Crust: Mix flour, sugar, and salt. Cut in butter with pastry blender. Add cold water gradually and stir just until dough is moistened. Cover and refrigerate 1 to 2 hours. Place half of dough on floured pastry cloth. Roll to 1/4-inch thickness. Cut 11-inch diameter circle; place in 9-inch pie tin. Prick surface lightly and bake 5 minutes in 400-degree oven. Brush with a little beaten egg and bake 1 minute longer.

Filling: Combine the filling ingredients. Place apple mixture in crust. Roll top crust as above and place on top of pie. Trim excess dough and crimp edges to seal. Cut 3 to 4 vents in top of crust, then brush with beaten egg and sprinkle with sugar. Bake 50 minutes to 1 hour at 400 degrees or until golden brown.
