Banana Cake

Ingredients:

2-1/4 cups whole-wheat pastry flour

2-1/2 teaspoons baking powder

1-1/2 teaspoons baking soda

2-1/4 teaspoons ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground cloves

1/2 teaspoon ground allspice

3/4 cup honey

3/4 cup unsweetened applesauce

4 teaspoons Ener-G Egg Replacer, mixed with 8 Tablespoons water and beaten until frothy

3 cups mashed banana

3/4 cup raisins

3/4 cup chopped walnuts (optional - high fat)

Preheat oven to 350 degrees.

Mix the dry ingredients together; set aside. Mix the honey and applesauce together. Add the Egg Replacer mixture, banana, raisins, and walnuts. Ad the wet mixture to the dry and mix well.

Turn into a nonstick 13 x 9-inch pan and flatten slightly with a spatula. Bake for 1 hour or until a toothpick inserted in the center comes out clean.

Makes: one 13 x 9-inch cake. Preparation Time: 30 minutes. Cooking Time: 1 hour.
