Apple Kuchen
- Ingredients:
- 1 package active dry yeast
- 6 Tablespoons honey
- 1 cup warm water
- 1/4 teaspoon salt
- 1-1/2 cups whole-wheat flour
- 3/4 cup raisins
- 1/2 cup chopped pecans
- 1-1/2 teaspoons ground cinnamon
- 1-1/2 cups whole-wheat pastry flour
- Topping:
- 1/2 cup whole-wheat pastry flour
- 1/2 teaspoon ground cinnamon
- 1/4 cup honey
- 1/4 cup date sugar
- 1/4 cup chopped pecans
- 2 apples
Add the yeast, honey, and salt to the warm water and stir until the
yeast dissolves. Stir in the 1-1/2 cups whole-wheat flour. Beat until
smooth. Cover with a towel and let stand in a warm place for 30
minutes, or until bubbly. Meanwhile, soak the raisins in warm water to
cover for 10 minutes. Drain.
Stir the yeast-flour mixture and add the raisins, pecans, and
cinnamon. Mix well. Add the pastry flour a little at a time. Stir
until the dough pulls away from the sides of the bowl. Turn out onto a
floured board and knead for 5 to 10 minutes, trying not to add more
flour unless the dough is too sticky to handle. (It should be soft but
not sticky.) Place in a lightly oiled bowl, cover, and let rise in a
warm place until doubled, about 1 hour.
Punch down the dough and knead 2 to 3 times. Place in a non-stick 13
x 9-inch pan. Cover and let rise for 15 minutes. While the dough is
rising, mix the topping ingredients together. Slice the apples thinly
and set aside. Push the dough out to fill the pan evenly. Layer sliced
apples over the dough and sprinkle the topping over the apples.
Preheat the oven to 350 degrees. Cover the kuchen and let it rise in
a warm place for 30 minutes. Bake for 30 minutes, or until golden
brown.
Makes: one 13 x 9-inch cake. Preparation Time: 1
hour, plus 2 hours and 45 minutes rising time. Cooking Time:
30 minutes.
