Specialty Recipe

Zucchini Bread Plus

Ingredients

3 eggs, beaten

1 cup vegetable oil

2 cups sugar

2 teaspoons vanilla

2 cups zucchini, coarsely shredded and unpeeled

One 8-1/2 ounce can crushed pineapple, drained

3 cups all-purpose flour

2 teaspoons baking soda

1 teaspoon salt

1/2 teaspoon baking powder

3/4 teaspoon fresh grated nutmeg

1 cup chopped nuts

1/2 cup currants

Mix first four ingredients in a large mixer bowl and beat on medium speed until thick and foamy. Stir in remaining ingredients. Grease and flour two 9 x 5 x 2-1/2 inch loaf baking pans. Spoon batter into pans and bake at 350 degrees for 45 to 60 minutes. Test at 45 minutes (toothpick will come out clean if done.)

Yield: 2 loaves.
