Ingredients
3/4 cup sugar
1/2 cup margarine
1/3 cup lemon juice
Grated rind of two lemons
3 eggs, beaten

Place all ingredients in top of double boiler over hot water. Stir until well blended and thick, about 5 minutes. Stores well in refrigerator. Serve over bread pudding or with scones. Excellent with Paradise Gateway Scones.

Serves: 8 to 10
