Village Park Potato Cheese Pie

Ingredients

6 to 7 cups (one 26-ounce package) shredded hash browns

2 Tablespoons olive oil

6 eggs

2/3 cup milk

2 cups shredded Colby-Jack cheese

Mushrooms

Onion

Garlic cloves

Red pepper

Chives

Spike (seasoning salt)

If frozen, thaw the shredded hash browns in a 200-degree oven. When thawed, mix hash browns with 1 Tablespoon olive oil and Spike (or salt and pepper). Place in bottom of 10-inch pie plate and bake in oven for 20 minutes. Let cool overnight or for several hours. Chop and saute all vegetables with remaining olive oil and Spike and place in refrigerator until ready to use.

When ready to serve, beat eggs with milk and add cheese. Pour half of egg/cheese mixture into pie crust. Add vegetables and pour remaining egg/cheese mixture on top. Sprinkle with fresh chives and bake in 350-degree oven for 35 to 40 minutes. Let stand 5 minutes before cutting into 8 pie pieces.

Variation: Spinach, mushrooms, or bacon with Swiss cheese. Also pepperoni can be added to above recipe to give color an flavor.
