Heritage Recipe

Whole Grain Pancakes

Ingredients:

1 cup old-fashioned or quick-cooking oats

1/2 cup cornmeal

1/4 cup wheat bran

2 cups boiling water

2 eggs

1-1/2 cups milk

2 cups flour

1 Tablespoon baking powder

Put oats, cornmeal, and wheat bran in large bowl. Cover with boiling water and stir. Mixture should be soupy, not stiff. Add more water if necessary. Cover bowl with a plate and let stand 15 minutes. Add eggs and milk. Stir with whisk to remove all lumps. Stir in flour and baking powder. Add more milk if necessary.

Bake on hot griddle, turning once when bubbles appear on surface of pancakes. Serve with warm maple syrup.

Yields: 20 pancakes
