Ingredients

3/4 of a 10-ounce package of fresh, washed spinach

3/4 stick butter, melted

10 eggs

1/8 teaspoon nutmeg

1/2 pound baby Swiss cheese, grated

1/2 pound feta cheese, crumbled

1/2 cup roasted red pepper, chopped and paper-towel dried

Grated Parmesan cheese (optional)

Cook spinach on plate with a small amount of water in microwave, about 1 to 2 minutes on high. Drain thoroughly and allow to cool. Melt butter in microwave about 3 minutes at 40% power. Set aside to cool. Beat eggs in large bowl and add nutmeg. Stir in cooled butter, then Swiss and feta cheeses, and then red peppers. Chop spinach and stir in egg mixture. Pour into sprayed 9 x 13-inch glass baking dish and distribute evenly. Sprinkle with Parmesan cheese if desired.

Bake 30 minutes at 350 degrees. Loosely cover with aluminum foil if browning too quickly. Rest, covered, for 5 minutes. Cut into squares and serve.
