Preheat oven to 350 degrees. Remove the core from the apples and peel top third of the skin. Mix the sugar, raisins and nuts (I like chopped walnuts, but others work) and stuff the apples with this mixture. Put a teaspoon of butter on each apple and sprinkle with cinnamon and nutmeg (my version also includes the lightest dusting of ground cloves.) Cover bottom of 9 x 13-inch baking dish with the cider and bake for 50 to 60 minutes (don't cook them until the skin cracks, unless you like apple sauce), basting every 20 minutes. Cool before serving (about 20 minutes) or they are very hot. For a unique tang, substitute cranberry juice for the apple cider. Can be served with half & half or cream.
