Specialty Recipe

Maine (Wild) Blueberry Pancakes
Ingredients - Dry Mix: (enough for up to 20 servings)
8 cups all-purpose flour
1 cup sugar
1/3 cup baking powder
1 teaspoon salt
Ingredients - Batter: (for two servings)
1 cup dry mix (see above)
1 egg
1/4 pound margarine
milk
1/2 cup blueberries (wild Maine Blueberries preferred)

Mix all ingredients of dry mix thoroughly and reserve (use dry mix as needed, depending on number served). Melt margarine. Break egg into dry mix. Mix in enough milk and margarine to make a very thick batter about the consistency of cream of wheat (or library paste). Add blueberries. Ladle about a third of a cup per pancake with griddle set at about 400 degrees. Turn over when pancake begins to bubble. Serve with butter and syrup.

Note: The thick consistency of the batter assures a delightfully thick and puffy pancake.
