Apple-Ginger French Toast

Ingredients:

1/2 cup (1 stick) butter

2 Tablespoons water

1 cup packed brown sugar

2 cups sliced, peeled apples (Fuji apples work best)

8-10 slices Pepperidge Farms Cinnamon Swirl bread

1/2 cup finely chopped candied ginger

5 large eggs

1-1/2 cups milk

2 Tablespoons vanilla extract

1 teaspoon ground ginger

Preheat oven to 350. Grease a 9 x 13 inch baking pan. Melt butter in small saucepan over low heat. Add brown sugar and water; stir until smooth. Pour butter mixture into baking pan. Arrange apple slices on top, sprinkle candied ginger over apples. Layer bread slices on top. Beat together remaining ingredients, pour evenly over bread. Bake for 45-55 minutes. Cut apart, drizzle pan drippings over plated toast.

Note: Tastes best if assembled and refrigerated the night before to let eggs soak into bread.
