Vegetable-Sausage Strata

Ingredients

1 medium onion, chopped

1 pound pork sausage

1 loaf French bread (about 10 inches, cut into 1/2-inch slices)

2 medium tomatoes, slices

2 medium zucchini, sliced

1/2 cup ricotta cheese

1/4 cup chopped fresh or 2 Tablespoons dried basil leaves

6 eggs

2 cups milk

The strata is best assembled the day before -- but don't bake it then. Cover and refrigerate, then bake in the morning and serve hot.

Cook onion and sausage over medium heat in 10-inch skillet for 15 minutes, stirring frequently, until sausage is done; drain well. Line bottom of 2-quart round or oval baking dish with bread slices. Top bread with sausage mixture. Arrange tomato and zucchini slices over sausage mixture. Spoon cheese over vegetables; stir in milk. Pour over entire mixture. Cover and refrigerate at least 2 hours or overnight.

Heat oven to 350 degrees. Bake strata uncovered 45 to 55 minutes until puffed and set in center. Serve immediately.
