A great way to welcome guests to your inn (or your home) with warm and soft molasses cookies, just like Vince's mother used to bake!

Ingredients
1 cup shortening
1 cup sugar
1 cup molasses
1/2 cup coffee
2-1/2 to 4 cups flour
1 teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon salt

Mix ingredients in order, using as much flour as you want to adjust the thickness of the cookie. Less flour would be for a thinner cookie, more flour would be for a thicker cookie. (We prefer the thicker cake-like cookies here at Maple Hill Farm.) Drop by spoonfuls onto a baking sheet. Bake at 350 degrees for 5 to 8 minutes. Dates, raisins, and nuts are optional.
