Ingredients:: 6 eggs; 1/2 cup low-fat cottage cheese; 1/2 cup sour cream; 1/2 cup salsa; 2 cups Monterey Jack and cheddar cheese, shredded

Spray 9-inch pie plate. Whip together eggs, cottage cheese, and sour cream in medium bowl. Spread salsa over bottom of plate and sprinkle cheese over salsa. Pour egg mixture over cheese. Bake at 350 degrees for 45 minutes.

Serves: 5 to 6
