West Virginia Blackwalnut Apple Cake

This is a family hand-me-down recipe which has become a popular favorite with our guests. A "real" apple cake -- moist and nutty with a tangy frosting. This cake tastes as good after a few days as it does right out of the oven!

Ingredients

4 cups coarsely chopped apples

2 cups sugar

2 eggs

1/2 cup vegetable oil

2 teaspoons vanilla

2 cups sifted all-purpose flour

2 teaspoons baking soda

2 teaspoons cinnamon

1 teaspoon salt

1 cup chopped black walnuts

Preheat oven to 350 degrees. Grease and flour a 9 x 13 x 2-inch oblong pan.

In a mixing bowl, combine apples and sugar and let stand for approximately 1 hour. In a separate bowl, beat eggs slightly, then add oil and vanilla; set aside.

In a large mixing bowl, combine sifted flour, baking soda, cinnamon, and salt; stir into egg mixture alternately with apple-sugar mixture. Stir in walnuts. Pour into pan and bake for 1 hour (or until cake tests done). Let stand in pan until quite cool; turn out on rack to complete cooling. Frost with Lemon Butter Frosting and decorate with black walnut halves, if desired. Cut into squares to serve.

Serves: 12 to 15
