Lobster Quiche

Ingredients

1/2 cup milk (fat-free, soy, or rice)

3 eggs or 3/4 cup Egg Beaters egg substitute or egg whites

1/2 cup Bisquick baking mix or or Jiffy muffin mix

1/4 cup to 1/2 cup canola oil

1/4 teaspoon salt (optional)

Dash or two of black pepper

1 teaspoon (or more) basil (optional)

6 to 8 ounces cooked, chopped lobster meat

3/4 to 1 cup grated cheese (blend of 3 or 4 cheeses)

Chopped red or white onion or scallions

Blend milk, eggs (or egg substitute/egg whites), baking mix, oil, salt and pepper, and basil together with mixer on medium speed or in blender. Pour into a 9-inch quiche pan that has been rubbed or sprayed with canola or olive oil. Add chopped lobster meat, grated cheese, and onions/scallions.

Press toppings (see below) into wet mixture and store overnight in refrigerator or bake at 350 degrees for 30 minutes until knife comes out clean. Doubles or triples nicely. Enjoy!

Toppings:
Vegetable - 1 to 2 Tablespoons grated carrots, zucchini, chopped green beans, or broccoli; 6 rings sliced from red pepper; chopped tomato; and/or any other veggies you like.
Seafood - 4 ounces chopped, crumbled crabmeat, lobster, salmon, or imitation crab.
Meat - 1 cup crumbled and cooked turkey bacon, chopped turkey ham, chicken, or turkey.
Greek - Substitute Feta cheese for shredded cheese, slice 1-1/2 cup black olives, and chopped tomatoes.
