A perfect autumn muffin!

Ingredients

2-1/2 cups all-purpose flour

2 cups sugar

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon salt

1 teaspoon baking soda

2 eggs, beaten

1 cup canned pumpkin

1/2 cup corn oil

3 ounces cream cheese, softened

2 cups apples, peeled and chopped

Streusel Topping

1/2 cup all-purpose flour

1/2 cup brown sugar

3 Tablespoons butter, melted

1/2 teaspoon cinnamon

Preheat oven to 375 degrees. Grease muffin tin.

In a medium bowl, combine 2-1/2 cups flour, sugar, cinnamon, nutmeg, salt, and baking soda. In a large bowl, mix together eggs, pumpkin, and oil. Add the flour mixture to the egg mixture and blend well. Mix in cream cheese and blend well again. Fold in apples. Spoon batter into greased muffin tin.

In a small bowl, mix together the streusel ingredients. Sprinkle on top of the muffin batter. Bake for 20 to 25 minutes. Cool muffins on a wire rack.

Makes: 15 muffins.
