Banana Bread

We always have bananas as part of a fruit bowl for guests. Sometimes they go like hotcakes, and other times they languish unappreciated for days. Then, what do you do with black bananas? Make banana bread, of course.

Ingredients

2 cups flour

1 Tablespoon baking powder

8 Tablespoons (1/2 cup) butter, softened

1/2 cup sugar

1 egg

1/2 teaspoon salt

1/2 teaspoon nutmeg

1 teaspoon vanilla extract

2 large ripe bananas (a third is OK)

1/4 cup coarsely chopped pecans

Cream butter and sugar together until light and fluffy. Add egg and beat mixture thoroughly. Sift together flour, baking powder, salt, and nutmeg. Mash bananas and add vanilla. Add the sifted ingredients and mashed bananas alternately to egg/butter/sugar mixture, beating after each addition. Add pecans. Pour batter into a buttered loaf pan. Bake in preheated 350-degree oven for about an hour.
