Whalewalk Breakfast Pizza

This recipe originally comes from Hawaii and called for Macadamia nuts. For availability and cost reasons, I have substituted chopped walnuts. We use our own granola but leave out the raisins, cranberries, and nuts.

Ingredients for Topping

3 bananas

1 cup brown sugar

3 Tablespoons butter

1 cup sour cream

Ingredients for Pancakes

2 eggs

2 Tablespoons salad oil

1-3/4 cups milk

1 teaspoon maple syrup

2 cups pancake mix of choice

3/4 cup granola (without raisins and nuts)

3/4 cup walnuts, chopped (pecans or almonds may be substituted)

Melt butter. Put brown sugar in saucepan and pour 1/4 cup water over. Bring to a boil. Keep warm.

Heat oven to 425 degrees. In a large bowl, beat the eggs, milk, oil, and maple syrup. Add the pancake mix and beat the mixture by hand until smooth. Coat the inside of a 12 x 14-inch pizza pan with nonstick cooking oil spray (or use Crisco vegetable shortening). Pour the batter into the pan and sprinkle with granola and nuts evenly over the batter. Bake in the lower 1/3 of the oven for about 12 to 15 minutes.

Cut the pie into 6 wedges and serve with sliced bananas and the brown sugar syrup as a topping. Add fresh fruit on the pizza as a garnish. Strawberries and blueberries add great color. A final dollop of sour cream completes the dish (use a pastry bag for extra flair).
