Heritage Recipe

Pumpkin Griddle Cakes

Ingredients

2 cups flour

2 Tablespoons sugar

4 teaspoons baking powder

1 teaspoon salt

1 teaspoon cinnamon

1-1/2 cup milk

1-1/2 cup canned pumpkin

4 eggs, separated

1/4 cup melted butter

Sift together dry ingredients. Combine milk, pumpkin, egg yolks, and butter. Stir into dry ingredients. Beat egg whites until stiff. Fold into batter. Cook on a hot, buttered griddle. Serve with warmed, maple syrup and additional butter.
