Orange Yogurt Pancakes

Ingredients

1/3 cup orange juice

Grated orange rind

1 cup plain yogurt

1 egg

2 Tablespoons melted butter

1 cup flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

Beat egg and add to orange juice, yogurt, and melted butter. Stir in dry ingredients. Mix in orange rind. Drop on hot buttered griddle. Turn when bubbly and browned to do other side. Serve with maple syrup or sliced strawberries sprinkled with confectionery sugar or fresh strawberry syrup made by placing strawberries, Triple Sec, pinch of sugar in a food processor.
