Best Scrambled Eggs

Ingredients

1 dozen eggs

3/4 cup cottage cheese

1/4 cup chopped, dried chives

Salt and pepper to taste

Butter

Break eggs into large bowl. Add rest of ingredients except butter. Beat well. Melt butter in heavy skillet on medium heat. Pour egg mixture into skillet and stir from time to time.

This makes creamy scrambled eggs, the way they should be. Be careful not to have skillet too hot -- eggs toughen with too much heat, which breaks water out of eggs.

Serves: 6
